My son the Muffin Man

I know someone who owns a local coffee shop where they sell organic snacks including the most delicious and moist muffins. One day she shared with me her secret ingredient for the muffins: yogurt! Of course I went home and googled muffin recipes with yogurt and found one that I’ve been using ever since, though we do still stop at the coffee shop once in a while for a treat.
Last week my son and I made these muffins together. I especially love this recipe because the muffins don’t crumble all over the place when my kids are eating them! I’ve been inspired by this post at goodLife {eats} to do more baking and cooking with my kids. Right now they are so interested in “helping” in the kitchen I figure I should make the most of it while it lasts!
Banana Muffins
2 cups flour
2 tsp baking powder
1/2 tsp salt
cinnamon (optional)
6 tbsp softened butter
3/4 cup sugar
2 large eggs
2 tsp vanilla
1 cup plain or vanilla yogurt
1 cup mashed bananas (about 3 bananas)
Combine the flour, baking powder and salt. Cream the putter and sugar using a mixer. Beat in the sugar and rest of wet ingredients. Add the dry ingredients.
{You can also add a cup of blueberries. Once I replaced the banana with chunks of apple pre-cooked slightly to make a sort of apple sauce. I also plan to experiment with using vegetable oil instead of butter since I usually forget to get the butter out ahead of time to soften!}
Bake at 375 F for 25 minutes. Makes 12 muffins.

Have so much fun baking with your kids! We will have to try these ones sometime. Logan won’t eat banana bread, but he will eat banana muffins - even if it is made with the exact same recipe!
